Work had a nice little Cinco de Mayo potluck yesterday and today. Folks brought enchiladas, tacos, bean dips, chips, sodas. I behaved, brought a huge amount of romaine lettuce, a roma tomato, and diced cooked chicken breast. Then topped it with some shredded cheese, chopped olives, and a delish homemade quacamole (not mine, but I begged for and got the recipe – totally primal) for dressing.  Yum!
